Low Carb Pizza Casserole- Healthy Meal Planning

Delicious low carb pizza casserole!!! One of our favorite low carb meals to make. It’s better the next day for left overs. It’s very easy to make too. I use a low fat beef or Iserno’s Italian sausage (hot or mild). Try it, you won’t be disappointed.

Healthy Meal Planning- Crack Chicken Quiche


The BEST quiche I’ve ever made. This is a unique one for sure! The chicken, bacon and ranch are the BEST taste combinations. This is simple to make. You can pop it in the oven and it will fill your house with its amazing smell.

Shrimp Enchiladas with Creamy Poblano Sauce

Fantastic shrimp enchilada recipe...and I’ve made a lot of different enchiladas. These are the amazing. I made them for guests and got rave reviews. The carrots and spinach combined with the shrimp are the perfect combo. I roast my pablano peppers the night before so they’re easier to peel. You can use reduced fat sour cream and it’s just as good. Ease up on the cheese to cut down on the fat (I never use as much as the recipe calls for). Make them ASAP. You will love them!!!

Loaded Turkey Meatballs

Loaded turkey meatballs!!! Wow! I was surprised at how amazing these were when I first made them. I’ve got a picky teenager and he went back for seconds on these. They are as close to clean, healthy eating as I’ve been able to find for meatballs. You have to make them to understand just how good they are and how good they are for you. Loaded with veggies and a lean meat, you can’t go wrong. Put them over cauliflower mashed potatoes or regular mashed potatoes. Delicious!!!

Taco Pot Pie

Get ready for this one folks. One of the best pot pies I’ve made. You can use a lean meat such as ground turkey breast to make this one a bit healthier. The pie crust finishes this meal off perfectly. Make your own or buy them already made, either way it’s delicious. It’s a favorite in my family and it makes so much that we always have left overs. I promise this one will not disappoint!

Zucchini Lasagna

Here it is folks, my favorite dish! This is amazing and you cannot trade the flavor for anything. It ‘s healthier than pasta lasagna, just as tasty and really easy to make. Zucchini offers a great alternative for pasta. It’s a summer squash (perfect timing!), is high in antioxidants, has anti-inflammatory properties, and is a high source of potassium. You can use a low fat chicken sausage, I prefer Isernos Mild Italian. The chicken sausage helps cut down on the fat significantly. Also, choose a low carb low fat pasta sauce. The amount of cheese you use is up to you. I love this dish and so does my family.

Easy Pork Tenderloin

Today I would like to share with you a relatively inexpensive meal that I feel good about making for my family. The pork loin is lean, not fatty like some meats. The green beans are fresh and take on the flavor of the pork loin and lastly, the baby potatoes can be served in smaller portions when cut in half or quarters.

This dish is a simple yet delicious meal. Pork loin is a lean meat and you can buy one that is already marinated or marinate one yourself. I use only fresh green beans. Baby red potatoes work perfectly and toast up nicely. You cook all ingredients at once on the same pan which makes clean up much easier. One addition tip, make sure you don’t cover the potatoes with the pork loin and they won’t cook through. This is a go-to meal every few weeks that my family loves! I will sometimes slice up some type of bread (French, sourdough or whole wheat) and it goes perfectly with the meal.
